  • 上什（蒸锅） 负责扣、熬、炖、煲等菜品的制作，以及鲍鱼、海参等干货的泡发。
  • 打荷. 負責配合爐頭師傅完成菜品烹製，進行菜品預加工、添置料頭、傳遞菜料、餐盤裝飾、菜品裝盤等。
